Apple Pancake

I'm back!

I made this easy, delicious dish for friends last weekend. Sharing the wealth!
  • 3 T unsalted butter
  • 2 apples
  • 2 T brown sugar
  • 1 T lemon juice (optional)
  • 1/2 cup milk
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon salt
  • Confectioners sugar for dusting
1) Preheat over to 400.
2) Slice apples and saute with butter in an oven-safe pan over medium heat.


3) Prepare your pancake batter: milk, flour, eggs, granulated sugar, vanilla and salt.
4) Squeeze lemon juice over apples. Add sugar. Allow to cook for a minute more or so, until apples are tender.
 5) Turn off burner and pour pancake batter over apples.
 6) Bake in pan at 400 for 15 - 20 minutes.
 7) Dust with powdered sugar and serve warm. Yum!
